Frozen Yoghurt Bark

Ingredients:

Strawberries

cream and pistachio yoghurt bark:
250 ml LANCEWOOD® No Sugar Added Double Cream Strawberries & Cream Yoghurt
75 g white chocolate, melted
45 ml pistachio nuts, chopped
freeze dried strawberries, crushed

Double chocolate & pretzel yoghurt bark:
250 ml LANCEWOOD® Double Cream Chocolate Flavoured Yoghurt
75 g milk chocolate, melted
60 ml shortbread
covered in red
green and white coloured chocolate
125 g Pretzels or 60 ml chocolate covered shortbread balls, crushed

Tropical yoghurt bark with toasted coconut:
250 ml LANCEWOOD® Lactose Free Double Cream Tropical Fruit Yoghurt
75 g white chocolate, melted
60 ml coconut shavings, toasted
60 ml dried banana chips
45 ml granadilla pulp

Vanilla yoghurt bark:
250 ml LANCEWOOD® Double Cream Vanilla Yoghurt
75 g white chocolate, melted
60 ml blueberries (optional)
lemon zest, grated
mint sprigs

Method

  1. Line a baking sheet with baking paper.
  2. Add the melted chocolate in a thin stream to the yoghurt and beat with an electric beater.
  3. Scoop the mixture onto the prepared baking sheet and spread it out evenly to more or less 1 cm thickness.
  4. Add your preferred topping and freeze until firm.
  5. Break into pieces and enjoy as a lovely summer dessert.
