Cottage Cheese Omelette

Ingredients:

3 large eggs
30 ml milk
1.5 ml salt
2.5 ml black pepper
2.5 ml paprika
15 ml butter
30 ml red pepper, chopped
30 ml fresh chives, chopped
50 g baby spinach
rinsed & chopped
50 g LANCEWOOD® Cheddar, grated
30 g LANCEWOOD® Medium Fat Smooth Balsamic & Onion Cottage Cheese

Method

  1. Add the eggs and milk to a mixing bowl and whisk together.
  2. Add the salt, black pepper and paprika and mix through.
  3. Melt the butter in a frying pan over low heat. Add the omelette mixture and allow to cook for 2 minutes.
  4. Sprinkle red pepper, chives and spinach all over the omelette and finish with cheese.
  5. Once the cheese has melted, remove the omelette from the pan and add it to a serving plate.
  6. Dollop 6 teaspoon portions of Cottage Cheese on half of the omelette and gently fold over.
  7. Garnish with chives and red peppers.
  8. Enjoy as a delicious breakfast or light lunch.
