Protein-Packed Cheesecake Baked Oats

Ingredients:

ripe
230 ml oats
120 ml LANCEWOOD® Lactose Free Low Fat Plain Smooth Cottage Cheese
mini
60 ml LANCEWOOD® Lactose Free Low Fat Plain Yoghurt
plus extra for garnish
170 ml almond milk
salt, a pinch
120 ml blueberries
plus extra for garnish
2 Tennis biscuits
20 ml vanilla flavoured lactose-free protein powder
10 ml xylitol
or honey

Method

  1. Preheat the oven to 180°C. Spray two individual ramekins or a small oven-proof dish with cooking spray.
  2. Add the banana, oats, cottage cheese, yoghurt, almond milk, protein powder, salt and xylitol to a blender or food processor. Process until well blended.
  3. Stir in the blueberries.
  4. Pour the mixture into the prepared dish. Press a few extra blueberries on the top of mixture. Bake for 30-40 minutes.
  5. Top the oats with a drizzle of yoghurt, then roughly crush the biscuits and sprinkle over the oatmeal. Garnish with fresh blueberries.
  6. Serve immediately and enjoy!
