Potato Fritters

Ingredients:

3 large potatoes, peeled & rinsed
25 g baby spinach, chopped
30 ml fresh chives, chopped
2.5 ml garlic powder
2.5 ml salt
2.5 ml black pepper
70 g LANCEWOOD® Cheddar, grated
40 g cake flour
250 ml oil for frying

Method

  1. Cut the potatoes into quarters and boil until soft.
  2. Once cooked, mash the potatoes and allow to cool.
  3. Using a large mixing bowl, add the mashed potatoes, spinach, chives, garlic powder, salt, pepper and cheese and mix well.
  4. Add the flour and mix well.
  5. Spoon a tablespoon of the mixture and flatten to make a disc. Repeat.
  6. Heat the oil over medium heat in a frying pan.
  7. Fry for 3 minutes per side until golden brown. Drain on absorbent paper.
  8. Enjoy as a delicious weeknight side dish!
