Lancewood Healthier cloud bread sandwich

Ingredients

Cloud bread:

80 g LANCEWOOD® Medium Fat Plain Cream Cheese  at room temperature
3 large eggs , separated
1.25 ml cream of tartar  or 5 ml lemon juice

Healthier BLT sandwich:

4 cloud bread  slices
30 ml LANCEWOOD® Medium Fat Smooth Balsamic & Onion Cottage Cheese
6 rindless streaky bacon , fried until crispy
slices of tomato
lettuce  a handful

Healthier avocado sandwich:

4 cloud bread  slices
60 ml LANCEWOOD® Low Fat Chunky Chives Cottage Cheese
small avocado , sliced
fresh chives , chopped

Method

Cloud bread:
Preheat the oven to 150°C. Line 2 baking trays with baking paper and lightly grease with non-stick spray. 

Add the cream cheese to a large bowl. Add the egg yolks one at a time and mix well.

Add the egg whites to a separate bowl and beat until the egg whites are foamy. Add the cream of tartar or lemon juice and continue beating until stiff peaks form. 

Stir ⅓ of the egg whites into the cream cheese mixture, then gently fold in the remaining egg whites until just combined, taking care not to deflate the mixture.

Spoon about 2 tablespoons of mixture onto the baking tray and use the back of the spoon to spread into a 10 cm in diameter circle. Repeat with the remaining mixture, forming 8 circles in total split between the 2 baking trays.

Bake for 25 - 30 minutes or until the bread is puffed and golden. Allow to cool on the tray for a few minutes, then carefully remove and place on a cooling rack.

Healthier BLT sandwich:
Spread 2 slices of cloud bread with cottage cheese. Top each slice with 3 crispy bacon rashers, tomato slices and lettuce. Close the sandwiches with the remaining cloud bread.

Healthier avocado sandwich:
Spread 2 slices of cloud bread with cottage cheese. Top each slice with avocado and sprinkle with chives. Close the sandwiches with the remaining cloud bread.

Delicious cottage cheese! The healthier sandwich spread.
