To serve:
Mix the broccoli, cottage cheese, cheddar, spring onions and lime zest together. Season to taste.
Divide the filling in 2 and spread onto 2 of the tortillas. Place the other 2 tortillas on top of the filling and lightly press together.
Heat a non stick frying pan. Place one tortilla in the pan. Fry over medium heat until the base turns golden and the cheese starts to melt.
Turn over and fry for another 2 – 3 minutes. Remove from the pan and repeat with the other tortilla.
Cool slightly and cut into wedges.
To serve:
Serve with onion and alfalfa sprouts, sliced spring onions, lime wedges, coriander and guacamole.
HINTS & TIPS:
To make guacamole, mash 2 ripe avocados together with lemon or lime juice. Add chopped coriander and finely chopped red onion (optional). Season to taste.
The filling also makes a delicious sandwich filling and is equally delicious on baked potatoes.
