Create NowSmashed potatoes:

Pickled Onions:
Smashed potatoes:
Wash and clean the potatoes and add them to a medium sized pot. Add the water and salt. Bring to a boil on high heat until just soft.
Smash the potatoes using a potato masher or the back of a spoon. Spray with oil and sprinkle with salt.Â
Place in a single layer in the basket of the air fryer and air fry at 200oC for 10 minutes until golden and crispy. Repeat with the remaining potatoes.
Pickled onions:
Combine all ingredients for the onions and leave to stand for 1 hour, tossing and stirring every now and again.
To serve:
Arrange the potatoes on a platter and dollop the cottage cheese on top. Drain the onions (reserving the sauce as it makes a delicious salad dressing) and scatter the onions on top of the potatoes.Â
Top with chopped chives and spring onions.
