Smashed Air Fryer Potato Salad

Ingredients:

Smashed potatoes:
750 g baby potatoes
olive oil
enough to spray or drizzle over
5 ml salt flakes

To serve:
LANCEWOOD® Medium Fat Smooth Cheese and Chives Cottage Cheese

Pickled Onions:
2 red onion(s), sliced
80 ml white grape vinegar
45 ml light brown sugar
60 ml olive oil, A pinch of salt, Chopped chives
spring onion(s)

Method

Smashed potatoes:
  1. Wash and clean the potatoes and add them to a medium sized pot. Add the water and salt. Bring to a boil on high heat until just soft.
  2. Smash the potatoes using a potato masher or the back of a spoon. Spray with oil and sprinkle with salt.
  3. Place in a single layer in the basket of the air fryer and air fry at 200oC for 10 minutes until golden and crispy. Repeat with the remaining potatoes.


Pickled onions: Combine all ingredients for the onions and leave to stand for 1 hour, tossing and stirring every now and again.

To serve:
  1. Arrange the potatoes on a platter and dollop the cottage cheese on top. Drain the onions (reserving the sauce as it makes a delicious salad dressing) and scatter the onions on top of the potatoes.
  2. Top with chopped chives and spring onions.
