Ingredients:

For the yoghurt base:

150 ml LANCEWOOD® Fat Free Greek Delight
3 tbsp cucumber , finely diced
2 tbsp lemon juice
0.5 tsp lemon zest , finely grated
0.5 small garlic clove , minced
1 tbsp fresh mint , finely chopped
salt and pepper , to taste

 

For the chicken: 
1 medium chicken breast(s)
0.5 tbsp olive oil
0.5 small garlic clove , minced
0.5 tsp lemon zest , finely grated
0.5 tsp salt
0.25 tsp black pepper
0.25 tsp smoked paprika
0.25 tsp oregano , dried

To serve: 
3 tbsp red onion(s) , pickled
0.5 small avocado(s) , cubed

Method

1. Prepare the chicken
Place the chicken breast in a ziplock bag or between two sheets of baking paper. Gently flatten to an even thickness (about 2cm) using a rolling pin or meat mallet.

2. Marinate for flavour
Mix the olive oil, garlic, lemon zest, salt, pepper, smoked paprika and oregano. Rub the marinade evenly over the chicken. Cover and refrigerate for at least 2 hours, or overnight for deeper flavour.

3. Cook the chicken
Preheat your air fryer to 200°C. Cook the chicken for 4–5 minutes per side, or until fully cooked through. Remove and allow to rest for 5 minutes before slicing.

4. Make the yoghurt base
In a bowl, combine the fat free Greek yoghurt, cucumber, lemon juice, zest, garlic and mint. Season to taste. This creamy base is what gives the dish its signature freshness and showcases the versatility of plain yoghurt benefits in savoury cooking.

5. Assemble the bowl
Spread the yoghurt mixture onto the base of a plate or bowl. Top with sliced chicken, avocado cubes and pickled red onions.

6. Serve immediately
