Low Cal Mango Protein Pudding
Ingredients:
15ml gelatine
45ml water
250g LANCEWOOD® Lactose Free Low Fat Plain Smooth Cottage Cheese
200ml LANCEWOOD® Lactose Free Low Fat Plain Yoghurt
150g mango
5ml vanilla essence
50ml sugar
or 5 sweetener sticks
mango slices
to garnish
Method
- In a small bowl, add the water and sprinkle over the gelatine. Leave to stand for 5 minutes.
- Microwave for 10 seconds, then stir and microwave for another 5 seconds, taking care not to boil it. Set aside to cool to room temperature.
- Add the cottage cheese, yoghurt, mango, vanilla, sweetener and cooled gelatine to a blender and blend until smooth.
- Pour into 2 bowls and refrigerate for 1 hour or until set.
- Garnish with fresh mango and enjoy this guilt-free summer dessert.
