Lemon Crumpet Bites

Ingredients

Crumpet bites: 

2 large egg
230 g LANCEWOOD® Medium Fat Plain Cream Cheese
250 ml oats
5 ml baking powder
45 ml lemon juice
grated zest of a whole lemon
45 ml xylitol
10 ml vanilla essence

To serve:

icing sugar , for dusting
raspberries
LANCEWOOD® Double Cream Lemon Cheesecake Flavoured Yoghurt  or LANCEWOOD® Double Cream Plain Yoghurt 

Method

Crumpet bites:
Preheat the oven to 180oC. Spray a muffin pan lightly with non-stick spray. 

Place the eggs, cream cheese, oats, baking powder, lemon juice, zest, xylitol and vanilla essence in a blender and blend until smooth.

Spoon into the prepared muffin pan and bake for 10 - 12 minutes or until a skewer inserted comes out clean. 

Transfer to a wire rack to cool.

To serve:
Place on a serving plate and dust with icing sugar. Top with a few raspberries and serve with a dollop of yoghurt.
