This savoury braai pie takes inspiration from lamb keema, pairing browned lamb mince with onion, garlic, ginger, green chilli, tomato, garam masala, turmeric, cumin and coriander. Fresh coriander lifts the rich, fragrant filling, while grated LANCEWOOD® White Cheddar melts through the lamb for creamy, savoury richness beneath the puff pastry crust. 

The key to a crisp braai pie is to cook the filling until most of the moisture has evaporated and allow it to cool completely before assembling. This helps protect the pastry from becoming soggy and gives it the best chance to puff and turn golden as it cooks.

Ingredients:

2 tbsp oil
1 large onion, diced
4 cloves garlic, minced
2 tsp minced ginger
1 green chilli, finely chopped
650 g lamb mince
1 large tomato, diced
2 tbsp tomato paste
1 tsp garam masala
½ tsp turmeric
1 tsp chilli flakes
1 tsp ground cumin
1 tsp ground coriander
Salt and pepper, to taste
60 g fresh coriander, finely chopped

200 g Lancewood White Cheddar, grated
400 g puff pastry
1 egg, beaten with 1 tbsp water, for egg wash 

Method

  1. Heat the oil in a large pan over medium- low heat. Add the onion and sauté gently until soft. Add the garlic, ginger and green chilli and cook for 12 minutes, stirring frequently.
  2. Increase the heat and add the lamb mince. Cook, breaking it up with a spoon, until well browned and cooked through. 
  3. Add the tomatoes, tomato paste, garam masala, turmeric, chilli flakes, cumin and coriander. Season with salt and pepper. 
  4. Cook over medium-high heat, stirring regularly, until the tomatoes have broken down and most of the moisture has cooked away. The filling should be relatively dry so that it doesnt make the pastry soggy.
  5. Stir through the fresh coriander, then remove from the heat and set aside to cool completely. 
  6. Line an approximately 23 cm diameter cast-iron dish with puff pastry. Spoon the cooled lamb filling into the pastry and spread evenly. Sprinkle over the grated Lancewood White Cheddar. 
  7. Cover with a second sheet of puff pastry, crimp the edges to seal and cut a few small slits in the centre to allow steam to escape. 
  8. Brush the pastry generously with the egg wash. 
  9. Place the cast-iron dish on the braai grid away from the direct heat and close the lid. Cook for approximately 30-40 minutes, rotating the dish occasionally, until the pastry is puffed and golden and the filling is hot. If the pastry is browning too quickly, move the dish further away from the coals or loosely cover the top with foil. 
  10. Alternatively bake at 200°C on the lowest shelf of the oven for 3040 minutes, or until the pastry is golden 
  11. Allow the pie to rest for 510 minutes before serving
