Lactose-Free Banana Bread
Ingredients:
3 large banana(s)
overripe
115 ml LANCEWOOD® Lactose Free Low Fat Plain Smooth Cottage Cheese
2 large egg(s)
80 ml oil
125 ml brown sugar
5 ml vanilla essence
245 g cake flour
5 ml ground cinnamon
5 ml baking powder
5 ml bicarbonate of soda
Method
- Preheat the oven to 180°C. Grease and line a loaf tin with baking paper.
- In a mixing bowl, mash the bananas using a fork. Add the cottage cheese and beat with an electric mixer. Add the eggs, oil, sugar and vanilla and beat well.
- In a separate bowl, sift together the flour, cinnamon, baking powder and bicarbonate of soda.
- Add to the banana mixture and gently fold in. Do not overmix.
- Pour the batter into the lined loaf tin and bake for 50 – 60 minutes, or until a skewer inserted comes out clean. Allow to cool inside the tin for at least 30 minutes before removing it and slicing.
- For a boost of protein, spread with our creamy Cottage Cheese instead of butter.
