Ingredients:

Hot honey 

½ cup honey 

1–2 tsp dried chilli flakes 

Pinch of salt 

 

Pasta salad 

500 g short pasta 

250 g chorizo, sliced 

400 g colourful heritage tomatoes, halved or quartered 

1 large handful fresh basil, roughly torn 

Salt and freshly ground black pepper 

 

Creamy hot honey dressing 

3/4 cup Lancewood Greek Yoghurt 

3 tbsp hot honey 

2 tbsp white wine vinegar 

1 tbsp olive oil 

1 tbsp reserved chorizo oil 

1 medium tomato, finely grated 

1 garlic clove, finely grated 

1 tsp Italian seasoning 

½ tsp chilli flakes 

½ tsp salt 

Freshly ground black pepper 

1–2 tbsp water, as needed 

 

Method

  1. Place the honey and chilli flakes in a small saucepan and warm gently over low heat until loosened and fragrant. Do not boil. Remove from the heat, add a pinch of salt and leave to infuse for 5–10 minutes.
  2. Cook the pasta in a large pot of well-salted boiling water until al dente. Drain and set aside to cool slightly.
  3. Preheat the oven to 180°C. Arrange half of the sliced chorizo on a lined baking tray and bake for 8–10 minutes, or until browned and crisp around the edges. Reserve the oil rendered from the chorizo and set the crispy chorizo aside.
  4. Whisk together the reserved chorizo oil, Greek yoghurt, hot honey, white wine vinegar and olive oil. Add the grated tomato, garlic, Italian seasoning and chilli flakes. season with salt and black pepper. Add 1–2 tablespoons of water, if necessary, to create a smooth, pourable dressing.
  5. Place the cooked pasta in a large bowl and add the sliced chorizo and tomatoes. Pour over the dressing and toss gently until evenly coated.
  6. Fold through the fresh basil and crispy chorizo.
  7. Transfer to serving bowls and finish with extra fresh basil and a drizzle of hot honey.
  8. Serve immediately.
