Chicken Pesto Pasta Salad
Ingredients:
500g shredded cooked chicken
250g LANCEWOOD® Creamed Smooth Cottage Cheese
45ml basil pesto
10ml lemon juice
half a red pepper
finely chopped
250ml cherry tomato(es)
halved
salt & freshly ground black pepper
250g pasta
cooked
half an avocado
sliced (optional)
60ml pine nuts
toasted
fresh basil
To serve:
ciabatta toasted
Method
- Mix the chicken, cottage cheese, pesto and lemon juice together until well combined.
- Add the red pepper and tomato and season.
- Add the pasta and mix through, adding a little milk to make the mixture more saucy.
- Arrange the avocado, pine kernels and fresh basil on top.
- Serve with toasted ciabatta.
