Easy Shepherd’s Pie

Topping: 4medium potatoes peeled boiled & mashed 230g LANCEWOOD® Medium Fat Plain Cream Cheese 375ml LANCEWOOD® Cheddar grated 125ml milk salt  to taste

Mince: 15ml oil 1onion(s) chopped 1garlic clove crushed 500g lean beef mince 250ml beef stock 60ml tomato paste 250g mixed frozen vegetables salt & freshly ground black pepper  to taste

Method

Preheat the oven at 180◦C.

Topping: Mix the mashed potatoes, cream cheese and 250 ml of the cheese together. Season to taste and set aside.

Mince:
  1. Heat the oil and fry the onion and garlic until soft. Add the mince and brown.
  2. Add the stock and the tomato paste. Simmer over low heat until most of the liquid has evaporated. Add the vegetables and heat through. Season to taste.
  3. Spoon into an ovenproof dish. Spoon the mashed potato topping on top and spread out.
  4. Sprinkle the remaining cheese on top. Bake for 25 – 30 minutes until golden and bubbling.
  5. Serve with salad.
