About This Recipe

At over 70g of protein a serving, this alfredo leans on LANCEWOOD® Full Cream Smooth Plain Cottage Cheese blended silky-smooth instead of cream, a proper family pasta dinner that happens to do a lot more nutritionally than it lets on.

Blended with Parmesan, milk and garlic, the cottage cheese forms a sauce with genuine body, clinging to each strand of tagliatelle the way a classic alfredo should, without a single drop of cream.

Sliced chicken and a fine grating of lemon zest finish the dish, the citrus cutting cleanly through the richness of the sauce with each forkful. Substantial enough for a family dinner, precise enough in flavour to serve with confidence when there is company at the table.

FAQs

How much protein is in this alfredo pasta?

Around 73.5g per serving, largely from the cottage cheese sauce and the grilled chicken breast.

What makes this alfredo different from a traditional one?

LANCEWOOD® Full Cream Smooth Plain Cottage Cheese is blended smooth with Parmesan, milk and garlic in place of cream, giving a similarly rich sauce with considerably more protein.

Can I use a different pasta shape?

Tagliatelle is used here, but any pasta that holds a creamy sauce well, like fettuccine or penne, would work.

What if my sauce is too thick?

Loosen it with a splash of the reserved pasta water, added gradually until the sauce coats the pasta the way you want.

Can I make this dish vegetarian?

Yes, leave out the chicken breast and the blended cottage cheese sauce still makes a satisfying pasta on its own.
