Cottage Cheese Greek Salad

Ingredients:

8 cos lettuce leaves
half a cucumber, sliced
1 yellow pepper(s), cut into strips
250 g cherry tomato(es), halved
half a red onion, thinly sliced
10 calamata olives, halved & pips removed
30 ml capers (optional)
15 ml fresh dill, chopped
15 ml fresh mint, chopped
30 ml olive oil
15 ml lemon juice
5 ml dried origanum
salt & freshly ground black pepper
250 g LANCEWOOD® Low Fat Chunky Chives Cottage Cheese

Optional additions:2 boiled eggs
canned tuna
smoked chicken

Method

  1. In a bowl, arrange the lettuce, cucumbers, yellow pepper, onions, tomatoes, olives and capers.
  2. Sprinkle dill and mint leaves on top.
  3. Mix the olive oil, lemon juice and dried oregano together and drizzle over. Season to taste.
  4. Add any of the optional additions.
  5. Spoon the cottage cheese on top and enjoy as a high protein salad.
