Ingredients:
French loaf
olive oil or canola oil, crushed garlic
Toppings variations:
Salmon:
smoked salmon
LANCEWOOD® Medium Fat Plain Cream Cheese or Smoked Salmon Flavoured Cream Cheese
lemon juice
fresh dill, chopped
salt & freshly ground black pepper to taste
capers
Tomato & basil:
LANCEWOOD® Low Fat Smooth Plain Cottage Cheese
cherry tomato(es), halved
basil, shredded
sugar, a pinch
olive oil
salt & freshly ground black pepper to taste
Mushrooms:
mushrooms, chopped
butter, for frying, crushed garlic
LANCEWOOD® Sour Cream
salt & freshly ground black pepper to taste
Parmesan, grated
lemon zest
fresh parsley, chopped
Method
- Place slices of French loaf on a baking sheet. Brush lightly with olive or canola oil. Rub with a little garlic to taste.
- Grill until golden on the one side. Turnover, brush with oil and grill until golden.
Topping variations:Salmon:
Spread with cream cheese. Chop smoked salmon and mix with a little lemon juice, dill and season to taste. Spoon on top of the cream cheese and top with capers.
Tomato & basil:
Spread with cottage cheese. Mix together cherry tomatoes, basil, a pinch of sugar, a touch of olive oil and season to taste. Spoon on top of cottage cheese.
Mushrooms:- Add a little butter and garlic in a pan and fry mixed mushrooms until golden. Mix with a bit of sour cream. Season to taste.
- Spoon onto bruschetta and top with Parmesan cheese mixed with lemon zest, parsley and freshly ground black pepper.
