Air Fryer Cheesy Phyllo Pies
Ingredients:
60g LANCEWOOD® Medium Fat Jalapeño & Chilli Cream Cheese
45g whole kernel corn canned
45g LANCEWOOD® Cheddar
grated
45ml fresh coriander
chopped
2sheet(s) phyllo pastry
60ml olive oil
or melted butter
To serve:
sweet chilli sauce
Method
- Preheat the Air fryer to 200°C.
- Add the cream cheese, corn and cheese to a mixing bowl and mix well. Add the coriander and mix through.
- Lay out a single sheets of phyllo pastry horizonally. Brush half of the sheet with olive oil and fold the pastry in half to create a double layer of phyllo pastry. Repeat with the second sheet.
- Take half a teaspoon of the prepared filling and place it in the center left of the pastry. Add three more dollops in a row leaving a 2 cm space in between. Repeat this process by placing the next row at the bottom left of the pastry sheet. Repeat with the second sheet.
- Brush oil around each filling.
- Cut each pastry into 4 strips from top to bottom and then in half cutting just below the center row of filling.
- Fold each strip by starting at the bottom left corner and folding it over the filling to form a triangle. Fold the triangle up over itself and then to the left. Up over itself again and then to the right to complete the triangle-shaped parcel.
- Air fry at 200°C for 4 minutes, shaking the basket halfway through to ensure even cooking.
To serve:
Serve with sweet chilli sauce and enjoy as a cheesy snack!
