Greek Salad Cottage Cheese Dip

Ingredients:

half a cucumber, finely chopped
1 yellow pepper(s), finely chopped
250 g cherry tomato(es), chopped
half a red onion, finely chopped
10 calamata olives, halved with pips removed & chopped
30 ml capers (optional)
15 ml fresh dill, chopped
15 ml fresh mint, chopped
30 ml olive oil
15 ml lemon juice
5 ml dried origanum
salt & freshly ground black pepper
250 g LANCEWOOD® Low Fat Chunky Chives Cottage Cheese
Trigz
Doritos or toasted pita triangles

Method

  1. In a bowl, mix together the cucumber, yellow pepper, onion, tomato, olives, capers, dill and mint.
  2. Add the olive oil, lemon juice and dried oregano and toss. Season with salt and pepper.
  3. Arrange the Trigz, Doritos or toasted pita triangles on the outside of a platter.
  4. Spoon the Cottage Cheese in the centre of the platter and spread it out, then top with Greek Salad.
  5. Dip your chips or crackers into the dip and enjoy as a delicious and healthy snack!
