Fresh Watermelon Rocket Salad

Ingredients:

Salad:
150 g rocket leaves
700 g watermelon, cut into cubes
125 g LANCEWOOD® Full Fat Plain Cream Cheese, cut into cubes

Dressing:
100 ml lemon juice
75 ml olive oil
salt & freshly ground black pepper to taste
fresh mint
a handful finely chopped

Method

Salad: Place the rocket, watermelon and cream cheese in a serving bowl.

Dressing:
  1. In a small bowl, add the lemon juice, olive oil, seasoning and mint.
  2. Whisk together until well combined.
  3. Pour the dressing over the salad just before serving and enjoy!
