Festive Cake Wreath

Filling:
230 g LANCEWOOD® Medium Fat Plain Cream Cheese
60 ml castor sugar
5 ml vanilla essence
45 ml milk

Wreath:
5 mini Swiss rolls
7 lamingtons
250 g strawberries, halved
100 g raspberries
2 kiwi fruit, halved and sliced
80 g blueberries
8 chocolate shortbread balls
8 white chocolate shortbread balls
mint leaves

Method

Filling: In a bowl, beat the cream cheese until smooth. Add the sugar and vanilla and beat into the cream cheese. Add the milk slowly until you have a spreadable consistency.

To assemble:
  1. Cut the Swiss Rolls and lamingtons in half. Spread the sides with the cream cheese filling.
  2. On a round board, place the lamingtons and Swiss rolls, alternating between the two to form a wreath.
  3. Top with strawberries, raspberries, kiwi, blueberries and chocolate balls.
