Creamy Jalapeño Chicken Soup

Ingredients

15 ml butter
10 ml garlic , crushed
2 jalapeño(s) , deseeded & chopped
250 ml LANCEWOOD Sauce Delight® Cheese Sauce
625 ml chicken stock
5 ml salt
5 ml oregano
5 ml cracked black pepper
5 ml paprika
625 ml chicken , cooked & shredded
250 ml LANCEWOOD® White Cheddar , grated

 

To serve as topping:

60 ml bacon , diced & fried
1 jalapeño(s) , sliced
15 ml fresh parsley , chopped

Method

Heat a pot over medium-high heat and add the butter, garlic and onion. Allow to cook for 2 minutes.

Add the jalapeños and cook for a further 2 minutes.

Add the cheese sauce, chicken stock, salt, oregano, pepper and paprika and mix through.

Add the chicken and cheese and mix together. Reduce the heat to low and allow to simmer for 30 minutes.

Serve the soup with a topping of your choice and enjoy warm.
