Baked Potatoes With Cottage Cheese & Toppings

Ingredients

4 medium potatoes
30 ml canola oil  or olive oil
salt  to taste


To serve:

250 g LANCEWOOD® Cottage Cheese  – Chunky or Smooth

Method

Preheat the oven to 200°C.

Wash and dry the potatoes. Use a fork and pierce the potatoes twice. Rub with oil and sprinkle with salt.

Place on a lined baking sheet and bake for 1 hour – 1 ½ hours until soft in the middle and golden on the outside. The cooking time will depend on the size of the potatoes.

Serve with smooth or chunky cottage cheese and any of the following additional toppings:

  • A dollop of pesto and rocket.
  • Tomato and onion salsa and coriander.
  • Crispy bacon pieces and chopped spring onions.
  • Grated LANCWOOD® Cheddar and caramelized onions.
  • Chopped chives.
