Aubergine Rolls With Cream Cheese & Spinach Stuffing

Ingredients:

Aubergine slices:
2 aubergines, sliced lengthways into 5mm slices
125 ml olive oil
2 lemon(s), zest and juice
2 garlic clove(s), crushed
30 ml fresh thyme, chopped
olive oil for frying

Cream cheese filling:
460 g LANCEWOOD® Medium Fat Spring Onion & Chives Cream Cheese
500 ml shredded spinach
tightly packed
1 small garlic clove(s), crushed
salt & freshly ground black pepper

To serve:
olive oil, a drizzle
spring onion(s), chopped

Method

Aubergine slices:
  1. Add the olive oil, lemon juice and zest, garlic and thyme to a mixing bowl and whisk together.
  2. Marinate the sliced aubergines in the mixture for 2 hours, turning them every 30 minutes.
  3. Heat a little oil in a frying pan and fry until soft and golden on both sides. Set aside to cool.


Cream cheese filling:
  1. Using a mixing bowl, add the cream cheese, spinach, red pepper, garlic and seasoning and mix until well combined.
  2. Spread onto the prepared aubergine slices and roll up.


To serve: Arrange the rolls on a platter and serve with a drizzle of olive oil and a sprinkle of spring onions.
