Cheese & Broccoli Savoury Muffins
Ingredients:
250g LANCEWOOD® Medium Fat Smooth Cheese and Chives Cottage Cheese
2large eggs
250ml broccoli florets
finely chopped
250ml LANCEWOOD® Cheddar
finely grated
250ml whole wheat flour
5ml baking powder
2.5ml paprika
1ml salt
Method
- Preheat the oven to 180o. Line a muffin pan with muffin liners and spray lightly with non-stick spray.
- In a bowl, beat the cottage cheese and eggs together. Add the broccoli and 2/3 of the cheese.
- In a separate bowl, mix the flour, baking powder, paprika and salt together. Add to the cottage cheese mixture and mix until just combined.
- Spoon the mixture into the prepared muffin liners and top with the remaining cheese.
- Bake for 15 – 20 minutes or until golden and a skewer inserted comes out clean. Transfer to a cooling rack and leave to cool.
HINTS & TIPS:
Use corn or grated baby marrows instead of broccoli.
