Cheese & Broccoli Savoury Muffins

Ingredients:

250g LANCEWOOD® Medium Fat Smooth Cheese and Chives Cottage Cheese 2large eggs 250ml broccoli florets finely chopped 250ml LANCEWOOD® Cheddar finely grated 250ml whole wheat flour 5ml baking powder 2.5ml paprika 1ml salt

Method

  1. Preheat the oven to 180o. Line a muffin pan with muffin liners and spray lightly with non-stick spray.
  2. In a bowl, beat the cottage cheese and eggs together. Add the broccoli and 2/3 of the cheese.
  3. In a separate bowl, mix the flour, baking powder, paprika and salt together. Add to the cottage cheese mixture and mix until just combined.
  4. Spoon the mixture into the prepared muffin liners and top with the remaining cheese.
  5. Bake for 15 – 20 minutes or until golden and a skewer inserted comes out clean. Transfer to a cooling rack and leave to cool.


HINTS & TIPS: Use corn or grated baby marrows instead of broccoli.
