Healthier Baked Apple Pie
Ingredients:
385 g canned unsweetened pie apples
30 ml cranberries plus a few extra for sprinkling on top
30 ml xylitol plus a little extra for sprinkling on top
2.5 ml cinnamon
125 ml instant oats
250 ml LANCEWOOD® Low Fat Plain Yoghurt or No Sugar Added Blackberry & Cherry
egg whites from 2 large eggs
Method
- Preheat the oven to 180°C. Spray an ovenproof dish or 6 large ramekins with non stick spray.
- Arrange the pie apples in the dish/ramekins. Scatter the cranberries over and sprinkle with xylitol and cinnamon.
- Mix the oats and the yoghurt together.
- Beat the egg whites until soft peaks form. Gently fold into the yoghurt mixture and spoon over the apples.
- Sprinkle a few cranberries and a little xylitol on top.
- Bake for 25 – 30 minutes or until golden and cooked.
HINTS & TIPS:
Unsweetened pie apples alternative:
Peel and slice 4 apples. Cover with boiling water and simmer for 10 minutes until soft. Drain well.- If using LANCEWOOD® Low Fat No Sugar Added Blackberry & Cherry Yoghurt instead of Plain yoghurt, decorate with fresh cherries and berries.
- Bake in the air fryer at 175°C for 20 minutes.
- Pie can be enjoyed as a delicious guilt-free breakfast.
