Fritters 3-Ways

Ingredients:

Fritters:
salt & freshly ground black pepper to taste
80 ml mayonnaise
2 large egg(s)
125 ml flour
45 ml oil for frying

Fritter variations:

Chicken & cheese fritters:
2 chicken breast(s), cut into 1 cm cubes
375 ml LANCEWOOD® Cheddar, grated
30 ml fresh dill, chopped
Corn

coriander & chilli:
410 g whole kernel corn, well drained
375 ml LANCEWOOD® Cheddar, grated
60 ml fresh coriander, chopped
1 red chilli, chopped

Bacon & cheese:
200 g back bacon, cut into 1 cm pieces
375 ml LANCEWOOD® Cheddar, grated
60 ml spring onion(s), chopped
1 green chilli(es), chopped

Creamy garlic & yoghurt dipping sauce:
180 ml LANCEWOOD® Double Cream Plain Yoghurt
75 ml mayonnaise
1 large garlic clove, crushed
salt & freshly ground black pepper to taste

Method

Fritters:
  1. Combine the ingredients of your preferred fritter flavour and seasoning in a large mixing bowl.
  2. Beat the mayonnaise and eggs together.
  3. Add the flour and mix to a smooth batter. Add to the flavour mixture.
  4. Cover, refrigerate and leave to stand for at least 1 hour.
  5. Heat the oil in a non stick frying pan.
  6. Spoon tablespoons full of the mixture into the pan. Flatten slightly. Fry over medium heat for 3 minutes until golden.
  7. Flip over and fry on the other side until golden and cooked. Drain on absorbent paper.


Creamy garlic & yoghurt dipping sauce: Mix all the ingredients and serve with the fritters.
