4 large eggs
350 g sugar
1 tsp vanilla essence
225 g butter, melted
1 x 225 g LANCEWOOD® Coffee-flavoured Drinking Yoghurt
80 g flour
60 g cocoa powder

Method
- Preheat the oven to 170°C and lightly grease a 20 x 20 cm baking dish.
- In a large mixing bowl, beat the eggs, sugar, and vanilla together using an electric mixer until pale, thick, and fluffy.
- Slowly pour in the melted butter while mixing, then add the LANCEWOOD® Coffee-flavoured Drinking Yoghurt . Beat until smooth and velvety.
- Sift in the flour and cocoa powder. Gently fold the dry ingredients into the batter until just combined. Avoid overmixing to keep the pudding soft and fudgy.
- Pour the mixture into the prepared baking dish and smooth the surface evenly.
- Bake for 55–60 minutes until the edges are set but the centre still has a slightly gooey texture.
- Allow the chocolate pudding recipe to cool slightly before serving warm with generous spoonful of LANCEWOOD® Mascarpone Cheese.
