Chicken Salad Sandwich

Ingredients:

2 chicken breast(s), cooked and diced
250 ml broccoli florets, finely chopped
1 small garlic clove, crushed
250 g LANCEWOOD® Medium Fat Smooth Cheese and Chives Cottage Cheese
2.5 ml mild curry powder
or more to taste
salt & freshly ground black pepper, to taste
4 sandwich square(s)
lettuce, shredded
slices of tomato

Method

  1. In a bowl, mix the chicken, broccoli and garlic together.
  2. In a separate bowl, mix together the cottage cheese, curry powder and seasoning to taste. Add to the chicken mixture and mix well.
  3. Spread the mixture onto sandwich squares and top with lettuce and tomato. Close the sandwich and cut in half.
  4. Enjoy as a delicious lunch or snack!
