Boerewors Penne Pasta

Ingredients:

250 g penne pasta or pasta of your choice
30 ml canola oil
1 red pepper(s) or yellow pepper, chopped
500 g boerewors
skins removed & cut into 3 cm pieces
250 ml tomato & chilli pasta sauce of your choice
salt & freshly ground black pepper
250 ml LANCEWOOD® White Cheddar, grated
15 ml fresh basil, shredded

Method

  1. Cook the penne according to the instructions on the packet. Drain and keep warm.
  2. Using a frying pan, heat the oil and fry the pepper for 1 minute. Add the boerewors and brown all over. Add the pasta sauce and cook for 1 minute.
  3. Add the pasta and gently toss to mix. Heat through and season to taste.
  4. Sprinkle cheese and basil over and enjoy!


HINTS & TIPS: For a spicy variation, fry 125 g thinly sliced chorizo with the peppers.
