Lancewood Breakfast Pancakes With Cheese & Bacon

Ingredients

Pancakes:

500 ml cake flour
10 ml baking powder
2.5 ml salt
2 extra large egg(s)
250 ml milk
225 ml water
10 ml lemon juice  or vinegar
75 ml oil
oil  for frying

To serve:

LANCEWOOD® Cheddar  or White Cheddar, grated 
12 rindless streaky bacon , fried 

Method

Pancakes:
Sift the flour, baking powder and salt together.

Beat the eggs, milk, water and lemon juice together. Add to the dry ingredients. Add the oil and mix until silky smooth. Leave to stand for 5 – 10 minutes.

Using a non-stick or slightly oiled pan fry until golden on the one side. Flip over and fry until golden on the other side and cooked through.

Keep warm on a plate on top of a saucepan with boiling water. Cover with saucepan lid.

To serve:
Sprinkle each pancake with cheese and add the bacon before rolling up.
