Preheat oven to 180°C. Line a muffin pan with muffin cases.
Sift the flour, baking powder, mustard powder, sugar and salt together in a bowl. Stir in 100 g cheddar.
In a separate bowl, beat the melted butter, egg, milk and sour cream together.
Add to the dry ingredients and mix until just combined. Do not overmix.
Spoon the mixture into the muffin cases. Top with the remaining 40 g of grated cheese.
Sprinkle paprika over the muffins. Bake for 20 - 25 minutes.
To finish:
Cut the muffins in half and spread with Marmite® cheese spread and top with grated cheese.
