150 g rocket leaves
700 g watermelon, cubed
125 g LANCEWOOD® Full Fat Plain Cream Cheese, cubed
100 ml lemon juice
75 ml olive oil
Salt & freshly ground black pepper to taste
15 ml fresh mint, finely chopped
Arrange the rocket, watermelon, and cream cheese in a serving bowl.
Using a small bowl, add the lemon juice, olive oil, seasoning and mint. Whisk together until well combined.
Pour the dressing over the salad just before serving and enjoy!
