Potato Fritters:
750 g potato, grated
125 ml spring onions, chopped
Salt & freshly ground black pepper to taste
1 egg, lightly beaten
125 ml flour
60 g LANCEWOOD® Low Fat Chunky Cottage Cheese
30 ml oil
Spicy Yoghurt Dipping Sauce:
150 g LANCEWOOD® Double Cream Plain Yoghurt
30 ml sweet chilli sauce
10 ml chilli sauce
15 ml lemon juice
Salt & freshly ground black pepper to taste
Potato Fritters:
In a mixing bowl, combine the potato, spring onion and seasoning. Add the egg, flour and LANCEWOOD® Low Fat Chunky Cottage Cheese and mix together. Heat oil in a frying pan over medium heat and add scoopful’s of the fritter mixture to the pan. Gently flatten and fry for 6 – 8 minutes on each side.
Spicy Yoghurt Dipping Sauce:
In a mixing bowl, add the LANCEWOOD® Double Cream Plain Yoghurt, sweet chilli sauce, chilli sauce, lemon juice and seasoning and mix well.
To serve:
Serve warm with the spicy yoghurt dipping sauce.
