Greek Delight Chia Seed Pudding

Made with LANCEWOOD® Greek Delight yoghurt, fresh raspberries and chia seeds, it’s the kind of recipe that works just as well for breakfast, a light dessert or a make-ahead snack. 
If you’ve ever wondered how to eat chia seeds, chia pudding is one of the easiest and most delicious ways. When soaked, chia seeds absorb liquid and create a naturally thick, spoonable texture-no cooking required. Compared to heavier options like double cream plain yoghurt, or double cream yoghurt, Greek yoghurt offers a lighter, tangy creaminess while still feeling luxurious.

Ingredients

1 cup(s) raspberries , fresh 
1 cup(s) milk
125 cup(s) chia seeds
1 cup(s) LANCEWOOD Greek Delight® Double Cream Plain Yoghurt
2 tbsp honey

 

To serve:

125 cup(s) raspberries , fresh
125 cup(s) coconut flakes

Method

1. Place the raspberries in a bowl and mash until juicy. Stir in the Greek Delight yoghurt until well combined. 

2. Add the chia seeds, milk and honey to taste. Mix thoroughly until evenly incorporated. 

3. Allow the mixture to stand for 3 minutes, then stir again to break up any chia seed clumps. 

4. Spoon the mixture into individual serving dishes or glasses. 

5. Refrigerate for at least 2 hours, or until the chia pudding has fully set. 

6. Just before serving, top with extra raspberries, a drizzle of honey and a sprinkle of coconut flakes. 

Serving Tip: 

This chia pudding can be made the night before and enjoyed straight from the fridge. It’s a great option when you want something creamy and satisfying without the heaviness-especially when compared to richer dairy options.
