Create NowPreheat the oven to 200°C.
Place the tomatoes into a large roasting dish. Add the onions, garlic and olive oil. Season and mix together.
Make a space in the centre of the dish and place the block of cream cheese inside. Arrange the bacon pieces evenly on top of the tomatoes.
Bake for 35 - 40 minutes.
Meanwhile cook pasta in salted water according to package directions. Reserve 125 ml of the pasta cooking water. Once cooked, drain and set aside.
Remove the dish from the oven and use a fork or potato masher to mash the tomatoes and mix together well.
Stir in the cream cheese to make a creamy sauce. Add the basil and baby spinach, as well as the reserved pasta cooking water and mix well.
Lastly add the pasta and mix through.
Garnish with basil and enjoy as a delicious mid-week dinner.
