Breakfast Frittata

Ingredients:

15 ml oil
30 ml butter
100 g bacon, chopped
500 ml spinach, chopped & tightly packed
15 ml fresh chives, chopped
salt & freshly ground black pepper to taste
3 extra large egg(s)
125 g LANCEWOOD® Full Cream Plain Chunky Cottage Cheese

To serve:
fresh parsley, chopped

Method

  1. Heat the oil and the butter together in a small pan that is safe to use in the oven.
  2. Add the bacon and fry until cooked. Add the spinach and chives and fry until wilted and liquid has cooked away.
  3. Beat the eggs and seasoning together until frothy. Pour into the pan.
  4. Cook over medium heat for about 2 minutes and make sure to pull the sides away to allow the egg to run in underneath.
  5. Spoon the cottage cheese on top and place the pan under a heated grill for 2 minutes. The centre must still be slightly wobbly.
  6. Remove from the oven and serve with chopped parsley.


HINTS & TIPS: Use ham or shredded cooked chicken instead of bacon.
