Air Fryer Chicken à la King Loaded Potatoes

Ingredients

Baked potatoes:

4 large potatoes
2 tbsp olive oil
1 tsp salt
30 ml Lurpak® butter

Chicken à la King filling:

half a green pepper , finely chopped
1 tbsp olive oil
2 skinless chicken breasts , cooked & cut into small pieces
375 ml LANCEWOOD Sauce Delight® Mushroom Sauce  (1.5 tubs)
salt and pepper  to taste

To finish:

50 g LANCEWOOD® Grated Gouda
4 streaky bacon , fried until crispy
1 tbsp fresh parsley , finely chopped

Method

Baked potatoes:
Pierce the potatoes several times with a fork and rub with olive oil and salt.

Air Fryer cooking:
Place in the air fryer basket and Air fry at 180°C for 40 - 45 minutes until cooked through.

Oven cooking:
Place on a baking tray and bake for 50 minutes at 200°C. 

Chicken à la King filling:
1. Heat the olive oil in a pan over medium heat. Add the green peppers and sauté until softened.

2. Add the chicken and mushroom sauce. Cook until the mixture is warm throughout.

To finish:
1. Slice open the potatoes and add a knob of butter to each one. Fill each potato with the chicken à la king filling and top with cheese.

2. Cook for a further 5 minutes at 200°C for 5 minutes until the cheese is melted.

3. Top with crispy bacon and parsley.
