Lancewood Turkish Delight Eton Mess

Ingredients

170 g fresh mixed berries , chopped
100 g castor sugar
220 ml whipped cream
15 ml vanilla essence

 

To assemble:

3 white meringues  (store bought)
360 ml LANCEWOOD® Double Cream Turkish Delight Flavoured Yoghurt

Method

Add the mixed berries to a bowl and sprinkle the castor sugar over. Mix to combine. Set aside and allow the sugar to caramelise.

Using a mixing bowl, add the whipping cream and vanilla essence and whisk until soft peaks form.

To assemble:
Crush the meringue nests roughly into pieces. Add a layer to the bottom of a small to medium sized glass.

Top with a layer of whipped cream. Then a layer of berries.

Add the yoghurt and repeat the layers, ending off with the yoghurt and berries on top. Fill three more glasses.

Refrigerate for an hour and enjoy as a delicious dessert!
