To assemble:
1. Add the mixed berries to a bowl and sprinkle the castor sugar over. Mix to combine. Set aside and allow the sugar to caramelise.
2. Using a mixing bowl, add the whipping cream and vanilla essence and whisk until soft peaks form.
To assemble:
1. Crush the meringue nests roughly into pieces. Add a layer to the bottom of a small to medium sized glass.
2. Top with a layer of whipped cream. Then a layer of berries.
3. Add the yoghurt and repeat the layers, ending off with the yoghurt and berries on top. Fill three more glasses.
4. Refrigerate for an hour and enjoy as a delicious dessert!
