To assemble:
Preheat the oven to 200°C.
Place the peeled garlic in a small ramekin. Add the olive oil. Close with another ramekin and bake for 15 - 20 minutes. Remove from the oven and allow to cool.
Place the garlic in a separate medium sized bowl and drizzle with 15 ml of the cooked olive oil. Add the cottage cheese and mix through using a fork.
To assemble:
Slice the ciabatta roll in half. Spread the garlic cottage cheese on both sides.
Add the lettuce, tomatoes and cold meat of your choice. Drizzle with mayonnaise and close the sandwich.
Wrap in sandwich paper and cut in half.
Enjoy as a delicious lunch or snack!
