Create NowAdd the mashed potatoes to a mixing bowl together with the cottage cheese and mixed vegetables.
Add the curry powder, coriander, salt and 50 ml of the flour. Mix through and leave to stand for 30 minutes.
Roll into 24 golf ball sized balls. Flatten slightly into patties and dip into the flour. Shake off any excess flour and then dip into the egg. Finally coat in breadcrumbs.
Heat 2 cm deep oil in a frying pan. Fry the patties turning over halfway through. Drain on absorbent paper.
Serve with chutney for dipping!
HINTS & TIPS:
Add a can of drained flaked tuna.
