Tomato Chutney:
Muffins:
1. Preheat oven to 180°C. Line a muffin pan with muffin cases.
2. In a bowl, beat the eggs.Â
3. In a separate bowl, combine the rice, chicken, broccoli and cheese in a bowl. Add the mustard and turmeric and mix in.Â
4. Add the beaten eggs to the dry ingredients and mix until well combined.Â
5. Spoon the mixture into the muffin cases. Use the back of the spoon and compress slightly.Â
6. Bake for 15 minutes or until golden. Serve with tomato chutney.
Tomato Chutney:
1. In a pan, heat the oil and fry the onion until golden. Add the garlic and fry for another minute.Â
2. Add the tomatoes, tomato paste, vinegar, mixed herbs, chili flakes, sugar and paprika. Season to taste.Â
3. Simmer over low heat until thick.
