Prawn Bites with Creamy Dip

Ingredients:

300 g sweet potatoes, cut into 1 cm slices
30 ml canola oil

Topping:
230 g LANCEWOOD® Medium Fat Spring Onion & Chives Cream Cheese
1 large avocado(s)
1 garlic clove, crushed
10 ml lemon juice
30 ml italian parsley, chopped
salt & freshly ground black pepper to taste
24 medium prawns, cooked & cut in half
60 ml micro herbs
lemon wedge(s)

Method

Oven baking:
  1. Preheat the oven to 180°C. Line a baking sheet with baking paper.
  2. Place the sweet potato slices on the baking sheet and brush with oil on both sides.
  3. Bake for 15 minutes. Turn over and bake for a further 15 minutes or until golden and crispy. Set aside to cool.


Air fryer baking:
  1. Brush the sweet potato slices with oil on both sides.
  2. Place in the air fryer basket and air-fry for 10 minutes. Turn over and air-fry for a further 5 minutes. Leave to cool.


Topping: Blend the cream cheese, avocado, garlic, lemon juice and parsley together until smooth. Season to taste.

Assemble:
  1. Arrange the sweet potato slices on a serving platter. Top with the cream cheese mixture and prawn.
  2. Sprinkle micro herbs over and serve with lemon wedges.
