Create Now1. Cut the potatoes into quarters and boil until soft.Â
2. Once cooked, mash the potatoes and allow to cool.Â
3. Using a large mixing bowl, add the mashed potatoes, spinach, chives, garlic powder, salt, pepper and cheese and mix well.Â
4. Add the flour and mix well.Â
5. Spoon a tablespoon of the mixture and flatten to make a disc. Repeat.Â
6. Heat the oil over medium heat in a frying pan.Â
7. Fry for 3 minutes per side until golden brown. Drain on absorbent paper.Â
8. Enjoy as a delicious weeknight side dish!
