Potato Fritters

Ingredients

3 large potatoes , peeled & rinsed
25 g baby spinach , chopped
30 ml fresh chives , chopped
2.5 ml garlic powder
2.5 ml salt
2.5 ml black pepper
70 g LANCEWOOD® Cheddar , grated
40 g cake flour
250 ml oil  for frying

Method

Cut the potatoes into quarters and boil until soft. 

Once cooked, mash the potatoes and allow to cool. 

Using a large mixing bowl, add the mashed potatoes, spinach, chives, garlic powder, salt, pepper and cheese and mix well. 

Add the flour and mix well. 

Spoon a tablespoon of the mixture and flatten to make a disc. Repeat. 

Heat the oil over medium heat in a frying pan. 

Fry for 3 minutes per side until golden brown. Drain on absorbent paper. 

Enjoy as a delicious weeknight side dish!
