Lancewood Lunchbox Pinwheels 4-ways

Ingredients

400 g roll puff pastry
1 egg , beaten

 

Basil pesto:

45 ml basil pesto
250 ml LANCEWOOD® Medium Fat Mozzarella , grated
6 sundried tomatoes , chopped
100 g salami , chopped

Mustard & caramelized onions:

45 ml wholegrain mustard
5 ml dried thyme
250 ml LANCEWOOD® Cheddar , grated
1 onion , chopped, fried in 15 ml oil & caramelised with 15 ml sugar

Bacon & cheese:

1 onion , finely chopped
125 g bacon or ham, chopped
5 ml dried mixed herbs
250 ml LANCEWOOD® Cheddar , grated

Bovril:

45 ml Bovril
250 ml LANCEWOOD® Cheddar , grated 

Method

Preheat the oven to 200°C. Line a baking sheet with baking paper.

Unroll the pastry and place on a lightly floured surface. Spread with the filling & topping of your choice.

Brush the last 1 cm with beaten egg and then finish rolling up. Brush all over with beaten egg.

Place in the freezer for 30 minutes to firm up. Use a sharp knife and cut into 1 cm wheels.

Place on the prepared baking sheet, leaving a 2 cm space in between them.

Bake for 15 minutes until golden and puffed.

Basil pesto
Spread the pesto over the pastry, leaving a 1 cm border open all around.

Sprinkle the cheese on top and arrange the sundried tomatoes and salami on top.

Starting from the long end closest to you start rolling up the pastry quite tightly finishing about 2 cm from the end.

Mustard & caramelized onions
Spread the mustard over the pastry, leaving a 1 cm border open all around.

Sprinkle the thyme and cheese on top and arrange the caramelized onions on top.

Bacon & cheese
Spread the onion and ham out in an even layer over the pastry leaving a 1 cm border open all around.

Sprinkle with mixed herbs. Sprinkle cheese on top.

Bovril & cheese
Spread the Bovril over the pastry, leaving a 1 cm border open all around. Sprinkle the cheese on top.

HINTS & TIPS:

  • Prepare pinwheels in advance and freeze. Defrost slightly, cut into wheels and bake as per cooking instructions above.

  • Suitable for baking in an air fryer. Place in the basket of an air fryer. Air fry at 200°C for 6 – 7 minutes.

  • Air fryer cooking times are a guideline as temperatures may vary. Please adapt cooking time accordingly.
