Low-Carb Chicken Lettuce Wraps

Ingredients

2 chicken breast(s)
15 ml olive oil
5 ml paprika
2.5 ml garlic salt
5 ml salt
1.25 ml pepper(s)
175 g LANCEWOOD Mixed Pepprs DIP de'lite®
1 tbsp red pepper(s) , finely chopped
1 tbsp spring onion(s) , finely chopped
half an avocado
1 cucumber , cut into sticks
8 romaine lettuce leaves

Method

1. Using a small bowl, mix together the paprika, garlic, salt and pepper.

2. Brush the chicken breasts with oil on both sides, then sprinkle over the spices and rub in well.

3. Air fry the chicken breasts at 200oC for 18 - 20 minutes, turning halfway. Set aside the chicken for 10 minutes.

4. In a mixing bowl, shred the chicken with either a hand mixer or with two forks. Add the mixed peppers dip and mix well. Season to taste.

5. Fill each lettuce leaf with spoonfuls of the chicken mixture and place on a platter. Garnish with avo, red peppers and spring onion. 

6. Serve immediately as a tasty lunch for the whole family!

HINTS & TIPS:
Oven directions: Place the chicken breasts on a greased baking sheet and bake in a preheated oven at 220oC for 18 - 20 minutes.
