1 x 80 g packet jelly (sugar free if you are Banting) – any flavour of your choice
10 ml gelatine
125 ml boiling water
90 ml cold water
250 ml fresh cream 1 x 250 g LANCEWOOD® Creamed Smooth Plain Cottage Cheese or Low Fat Smooth Plain Cottage Cheese
Fresh fruit and mint to serve
Add the gelatine to the jelly. Add the boiling water and stir until dissolved. Add the cold water and leave to cool. Beat the cream until stiff. Set aside. Beat the jelly and cottage cheese together until smooth. Fold the cream gently into the jelly mixture. Pour into a loaf pan lined with cling wrap.
Refrigerate for 2 hours or until set. Serve sliced with fresh fruit.
