250 g penne pasta (or pasta of your choice)
30 ml canola oil
1 red or yellow pepper, chopped
500 g sausage/boerewors, skins removed and cut into 3 cm pieces
250 ml tomato & chilli pasta sauce of your choice
Salt & freshly ground black pepper to taste
250 ml LANCEWOOD® White Cheddar, grated
15 ml basil, shredded
Cook the penne according to the instructions on the packet. Drain and keep warm.
Using a frying pan, heat the oil and fry the pepper for 1 minute. Add the sausage and brown all over. Add the pasta sauce and cook for 1 minute.
Add the pasta and gently toss to mix. Heat through and season to taste.
Sprinkle cheese and basil over and enjoy!
HINTS & TIPS:
For a spicy variation, fry 125 g thinly sliced chorizo with the peppers.
